Low Carb Pasta: Carbohydrates are not the enemy. The whole grains like rye, oats, and barley are the rich packages of nutrients from magnesium to zinc, digestion-friendly fiber, folate, and iron. In addition to this carbohydrates give our red blood cells, central nervous systems and brain the fuel that is essential for their functioning and also provides us energy. But all the carbohydrates are not equal. 

According to the Nutritionist, RDN, Leah Silberman refined carbohydrates are completely void of fiber and in the grain kernel, they lack germ and bran portions. She further said that they are stripped off from any nutritional value because they have processed. She said that when it comes to choosing a low carb pasta always looks at the ingredients first for perfect health 

LOW CARB PASTA SAUCE

When a person is on a low carb diet every gram of carbohydrate matters. A person only gets a certain amount of calories from carbohydrates per day to follow or maintain the diet plan. So while indulging in the carbs containing food a person will have to be careful about carbohydrates containing foods. For maintaining the diet plan and the number of calories from carbohydrates instead of topping the pasta with high cheese or cheesy sauces, you can use low carbs pasta sauces to avoid breaking the diet 

Recipe for Low Carb Pasta Sauce (Peanut Sauce):

Ingredients:

  • Water
  • Lime Juice
  • Minced Garlic
  • Soy Sauce
  • Sprinkle of Sucralose (For Sweetness)
  • Hot Pepper Sauce
  • Cayenne Pepper (Pinch)

Procedure:

Combine all-natural peanut butter in a small saucepan with a little water, a sprinkle of sucralose, minced garlic, soy sauce, and lime juice. Add a pinch of cayenne pepper and a sprinkle of hot pepper sauce. On low to moderate heat cook, all the ingredients until sauce are thin enough and smooth to pour over the pasta.

LOW CARB PASTA RECIPE

Ingredients:

  • 1 Yellow Onion
  • 1 tbsp. Extra Virgin Olive Oil
  • 3 Cloves of Minced Garlic
  • 2 Medium Eggplants
  • Ground Black Pepper
  • 2 tsp. Oregano
  • 1 large Egg
  • 4 c. shredded mozzarella cheese
  • Kosher salt
  • 1, 25-oz. marinara jar
  • ¼ c. freshly chopped parsley
  • ½ c. grated parmesan (fresh)
  • 16 oz. whole ricotta milk

Procedure:

Pre-heat the oven at 400º. Cut the eggplants from the end and sliced them thinly, the thickness is about 1/4ʺ. On the cooking, rack lay the slices and seasoned them with salt. Let the slices remain on the rack for 20 minutes. After that flip the slices and again seasoned them with salt and let it again remain on the rack for another 20 minutes. After this Heat the oil in a large skillet on medium heat. For 1 minute sauté the minced garlic and then add oregano and onions. Season with pepper and salt and cook it till the onions become translucent. When the onions are translucent add marinara and cook it until warmed through. Combine parsley, ricotta, parmesan, and egg in a medium bowl. Season it with pepper and salt. Spread a layer of ricotta mixture, a thin layer of eggplant (noodles) and a thin layer of marinara sauce, then after all these add the layer of mozzarella and after that repeat all the above layers again. Top last the layer of eggplant with parmesan, mozzarella and marinara sauce in a 9ʺx13ʺ dish. Cover the dish with aluminum foil and bake it for a period of 35 minutes.
